Farmhouse Favourites cookbook is the culmination of over 40 years’ experience, by members of Irish Farmhouse Holidays, producing home made foods to serve to our guests. We hope you will be inspired and enriched by this collection of Irish recipes, some of which have been lovingly handed down through the generations, and that you will enjoy sharing them with family and friends.
Brown Soda Bread
Ingredients
- 1½ lbs white flour
- 5 ozs wholemeal Flour
- 5 ozs bran
- 1 level teaspoon bread soda
- 1 level teaspoon cream of tartar
- 4 ozs melted butter
- 3 ozs brown or caster sugar
- 4 eggs beaten
- ½ teaspoon nutmeg {optional}
- Sesame seeds
- This mixture makes 4x2 lb loaf
- Cook at Gas 5 for about 1 ½ hrs
Method
- Sieve white flour and bread soda
- Add wholemeal Flour, bran baking powder, cream of tartar, sugar and nutmeg
- Mix to a wet dough with melted butter, eggs and fresh milk
- Divide equally between 4 greased 2 lb loaf tins
- Sprinkle tops with sesame seeds
- Bake in a moderate oven for about 1½ hours or until cooked
- When cooked each cake can be sliced and put in the deep freeze

Irish Cream Liqueur
Ingredients
- ½ pint single cream
- 1 large tin of sweet condensed milk
- 2 large eggs
- 1 mug of whiskey
- 1 tablespoon instant coffee dissolved in a little water
- 2 teaspoons of drinking chocolate
Method
- Mix all the ingredients together and give a good shake
- Store in the fridge
- Will last forever if you can resist it

Courgette and Brie Soup
Ingredients
- 1 lb. courgettes
- 1 onion
- 6 ozs brie
- 2 pints chicken stock
- ¼ pint cream
Method
- Chop up the courgettes and onion, add stock, and cook gently for 30 mins
- Add Brie and when it is melted liquidise the soup
- Add cream and season to taste

Rum Ice Cream
Ingredients
- 1 whole egg
- 2 egg yolks
- 4 ozs. caster sugar
- ½ pint cream
- Rum to taste
Method
- Whisk eggs and sugar until thick and creamy
- Lightly whip the cream
- Fold cream into the egg mixture
- Add rum to taste
- Put into container and freeze
